Chicken Soup Homestyle

A climate change inevitably brings on the common cold - the irritating feeling you get around the throat and then a stuffy or sometimes runny nose.  In effect, such colds completely wear off in just about 7 days - whether you treat them with medication or not. However, to survive that irritation and feel slightly better there is one yummy remedy - you guessed it right - the Chicken Soup of the "for the soul" variety. You can google to check how certain amino acids released during the "soup making" effectively help treat the common cold symptoms. In our home, we simply love this Chicken Clear Soup for its taste as well as healing ability. The homestyle version beats the instant "processed" (read: incl. preservatives) version anytime. If it looks a little drab, it most certainly tastes heavenly. Ingredients: 1. DINNER TONIGHT - PART II

Note - Part I of this post is a separate post for today. Please see archives. Dessert should be avoided - one should go and brush their teeth instead. It helps control the urge for something sweet after dinner. It's obvious we did not take that advice today. So without making an elaborate dessert, we opted for this treat instead. I had some simple ingredients in stock - like the nearly over condensed milk tin, some kit-kat chocolate, strawberries, some marshmallows and some leftover black grapes.  So simply did a double boiler kit-kat + virgin coconut oil - melted chocolate - similar to a Chocolate Fountain. Added 2 tsp of milk to a heaped tbsp of milkmaid and heated for 20 seconds in the microwave. And then served a quick and yummy dessert. DINNER TONIGHT - PART I

Monday blues set in as early as a bright and sunny Sunday morning. So the Sunday Dinner needs to be Quick, Simple, Appealing and Healthy.  After all, an entire week rests on how you feel on a Monday morning, isn't it ? ;-) Philosophy (gyaan) apart, today's dinner was all those things - especially quick since it was made out of "available" ingredients at home. Today's post is split into 2 separate posts, Part I and Part II - Dinner followed by Dessert of course. Mackerel (Bangda) with Crackling Spinach (big name for fried spinach leaves) and Salad Ingredients already in stock at home: 1. Mackerel (bangda) gutted, cleaned and washed 2. Spinach Leaves 3. Bocconcini Cheese (I guess Paneer / Cottage Cheese or similar will do - but this ingredient is optional) 4. Broccoli So this is the way Dinner was made: 1. FunFair Stall

The Fun Fair held in our residential complex on last Sunday was crowded, tiring and busy. But above all it was Super fun. It is satisfying to be able to create an atmosphere of fun and laughter in the otherwise routinely busy schedules of everyone around us. It was a humble beginning with one of the ladies putting forth the idea of holding such a fair. From there on, it was about holding a meeting for all interested residents to give in their inputs on the "when" and "hows". Then there were notices about calling residents to put up stalls and then about the kind of stalls being put up. And before we knew it, we were organizing an event for residents in our complex. Some more huddles to discuss ideas and some delegations and we were set. On D-day we helped with putting up decorations and lighting and organized the stalls so that there were no blank spaces or hindrances for anyone. I had come up with a stall of Goodies for sale and a game of Lucky Dip. Here&#

Fun Fair in Progress

A Fun Fair being held in our residential complex. So the preparations are going on full swing. I am also a part of the "organizing" group. Will keep you posted on the developments on this .......till then - have a look at a carnival cutout / face in the hole cutout i made today night by burning the midnight oil.....yeah i know the cap over the helmet looks weird and bendy - will do something to fix it ;-) Hoping to see kids happily posing as astronauts being directly launched into space.

Homemade Frankie

Have you tried the Mumbai Frankie before ? Tried making a home version of it and obviously with ingredients like cheese, potato and corn in the patty - even a simple chapatti wrap tasted yummy. This can be either a breakfast, mini lunch, snack or dinner dish. You could say i removed the filling out of a usual aloo paratha and made the patties. Makes approx. 6 patties 1 cup frozen corn : boiled in the microwave and then given a "blitz" / quick 2 sec mixer grind. Simple basic ingredients:  The kneaded chappati dough / u can also make it out of refined flour (but that's not the healthiest option) 1 boiled potato -mashed with your fingers / ready made potato mash will also work 2 tbsp grated cheese 1 cup corn - ground coarsely as mentioned before Salt to taste Lemon juice to taste Butter (optional) Tomato Ketchup / Lettuce / Olives / Sliced Onions and Tomatoes - all optional Basic Ingredients: Chappati - with a little clarified butter / ghee to keep

easy peasy Pasta - My first blogpost

Dreaming - more importantly Visualizing and trying to Achieve has always given me a kick.  Whether it is studying, working for a corporate, trying out a new recipe or creating a new personally satisfying business venture - it's about the satisfaction and happiness i get during the process and with the end result.  I have begun another journey today by creating this blog and hope to contribute all my ideas, implementations and successful ventures. As a beginner's treat here is a recipe for a quick and easy "Veg" pasta. You may add boiled "chicken" bites to turn it into a non-veggie pasta. I made this pasta for my neighbours' son's 5th Birthday Party and received a lot of appreciation. Will keep in mind to click a "served on plate" version for any recipe posts in future. Enjoy!! U will need Elbow/Macaroni Pasta + Oil drops n Butter + Garlic + Onions + Veggies (atleast corn, carrot n tomato + any extras like brocol
