French Toast Cheese Sandwich

Sometimes, the craving to eat something indulgent for evening snacks is just so uncontrollable. 

Apart from the trusted french fries and bhajiya's (fried dumplings made from various veggies) there is always an option of the delectable and melt in the mouth French Toast. 
However, when you add a generous amount of grated cheese to make a french toast sandwich, you take the the dish to the next level. 

This idea is courtesy my hubby and as a tip it is suggested that you make the french toast a little less sweet than what you normally prefer. Then you can savour the sweet toast with the salty cheese oozing out - aaah...a perfect treat for indulgent evenings.

Ingredients for making 4 sandwiches:

8 slices of good bread (1 day old bread works better since the bread is not too soft when dipped in the egg mixture)

Butter / Oil to fry the toast on griddle (tava)

2 eggs

1 cup to 1 1/2 cup milk - as required

sugar - to your taste (we used 4 heaped teaspoons)

2 drops of vanilla essence - to give it a cake-y flavour

Grated cheese - as much as you like (we used 1 cube / 25 gms per sandwich)

Method:
Beat eggs and sugar together, add milk, beat some more and then add the essence. Heat a griddle (tava) and add butter (say 1/2 to 1 tsp or 1 tsp oil per slice). Arrange 2 or 3 or 4 slices on the griddle (as small or as big the griddle is) and fry each side for 1 to 2 mins. or until each side turns a golden colour.



Now load one slice with grated cheese and top it up with another one - while the slices are still hot. 

This makes the cheese melt instantly. Cut the sandwich into half or 4 squares and serve.
