Savoury Pancakes

Been a while since the last post. Was hoping to add another travel post however the last trip didn't go well since my kiddo fell sick. Was busy with her convalescence. Now that she is better i can get back to my routine.

This is a quick recipe for savoury pancakes made from cucumber and rice flour that can be had for breakfast, lunch or dinner. They are quick and easy to make when you have the requisite ingredients available. I made them today morning but forgot to click the pic, so i am posting a pic from the web of similar indian pancake.



Ingredients for 4 hearty pancakes


2 small cucumbers, peeled and grated
Curd/ natural plain unflavoured yoghurt - 3 tbsps
Rice flour - 2 cups (nearly since you got to adjust the flour as per the cucumber-curd mixture)
Red chilli powder - per taste (used 1 tsp)
Turmeric powder - 1/4 tsp
Salt - per taste
Sugar - 2 tsps
Sesame (Til) seeds - 1 tsp
Carrom (Ajwain/ Owa) seeds - 1 tsp
Fresh corriander leaves - handful chopped

Mix all the above ingredients to a cake mixture like consistency - so it should not be a runny batter nor should it be like kneaded dough - you should be able to pick a chunk of this mix and slap it to the griddle (tawa) and should be able to spread it evenly with the help of your palms. If this feels too clumsy for you, you can opt to do the same with a ladle too.

Heat a griddle (tawa) and add a few drops of oil to it. Spread oil evenly and then spread the pancake mixture onto it. Make 3 or 4 holes in this pancake and add a tiny drop of oil to each hole. Turn the gas stove to medium flame (so pancake doesn't burn). Let the pancake cook on one side for 2 mins. Check whether it slides out easily and then turn the pancake on the uncooked side and heat for another min or 2 to get deliciously healthy crunchy pancakes. 

You can serve these pancakes with either tomato sauce or yoghurt or chutneys or pickles or basically any kinda dips. A very dear neighbour taught me these pancakes and they are a saviour on many lazy hungry days.
