Mango n Rice Pudding

A sweet something - call it a kheer, call it a pudding, call it a dessert, whatever !!! Its easy, tasty and sweeeeeeeet. Please see the last paragraph for a vegetarian option.




Ingredients (serves 2):
1 mango chopped into 1 inch cubes (preferably Indian Alphonso)
1 cup of cooked rice (you can even use left over plain rice)
1/2 cup milk
1/2 tsp vanilla extract / essence
2 eggs beaten
2 heaped tbsp sugar (or a bit more if you like it a tad sweeter)
Nutmeg powder (grated on top) - just a pinch - hope you know it has a drugging effect
Greased oven proof bowl/ deep dish (greased with butter ofcourse)

Method:

Pre-heat the oven to 180 degrees celsius.

Divide the mango cubes into 1/2 portions. Mash slightly one half portion and keep aside the rest. 

Mash the cooked rice well - don't fret about it though, a little bit of whole rice tastes nice in the dessert. (Please do not blend the rice).

Dissolve the sugar in the milk. Now mix mashed mango, mashed cooked rice, sweetened milk, beaten eggs and vanilla extract. Pour this entire mix into the greased oven proof dish and then sprinkle the nutmeg / grate the nutmeg on the mixture. Set the oven once again for 180 degrees celsius and 20 + 2 minutes and bake the pudding. Check after 20 minutes. If still too liquidy, then bake for a further 2 minutes and let it rest a while in the oven. When done, remove and cool it.

Although you can enjoy it hot too, the best way is to let it cool fast under a fan and then push into the freezer for 15 mins. If you have loads of time on hand store it in the refrigerator until serving time. Serve with remaining cubed pieces of mango. Enjoyyy...



For a non-egg version, omit the oven too. Increase the quantity of milk to 1 1/2 cup milk and sugar accordingly. Just mix mashed rice with sweetend milk, vanilla extract and nutmeg powder and cook on stove top. Once well mixed and cooked, this becomes a kheer. Once cool, you can mix in the mashed mango, refrigerate and then serve it with cubed mangoes. This non egg receipe will not be as thick as the pudding receipe above. 

Now for a Guru receipe. Nigella Lawson is one of my guru's in cooking simple yet exotic and flavourful food. Ofcourse i have a long way to go before i even qualify to be her disciple. However, on the request of a dear friend i am giving a link to one of the yummiest desserts caramel croissant pudding by Nigella. Usually i substitute the croissants with one day old bread and the bourbon/rum with vanilla extract / essence.
