Eggs and cheese on toast n more

Friends, here's something to pep up an egg on toast or an egg on a dosa. Quick to make and yummy to eat, such simple receipes help a lot in easing the pressures of cooking.

Receipe 1 - Eggs on Toast (Serves 2):
Ingredients:
4 Slices of plain white or any sort of bread
2 hard boiled eggs
1 Tomato cut into 1/2 inch thick roundels
2 tsps of Butter
3/4th cup Processed grated cheese
4 or 5 tsps of Cream Cheese
Salt and pepper to taste
Method:
Butter the bread slices (cut the edges of the bread if kids like them so). Cut the hard boiled eggs into 4 round pieces each. Lay 2 slices of tomato on each buttered slice of bread, followed by 2 pieces of egg, add some grated cheese and a dollop of cream cheese. Sprinkle salt and pepper to taste. Proceed with either 2 mins. on high in the microwave or 1 min. in a pre- heated oven at 180 deg. celsius or 1 min. on a pre-heated pan on the stove top - until the cheese has melted.

Serve as it is or with sauce. This makes for a quick and filling breakfast along side some cut fruits or can easily be served up as snacks for hungry kids during their play time breaks.

Tip: The microwaving is fastest however the bread slices will not toast up, whereas in the oven or on stove top, they will. 
You may want to add in herbs or corriander too.

Receipe 2 - Egg on Appam / dosa - Sri Lankan style (Serves 2):
If you have any left over Appam or dosa batter and cannot fathom eating it yet again with the same old chutney/ sambar or stew, then here is a simple way to use some egg and cheese.
Ingredients:
Appam / dosa batter
2 eggs for 4 appams/ dosas
Cheese spread or cream cheese (any soft cheese) to apply on top
Oregano, salt and pepper to taste
Fillings, if desired - jalapenos / pickled cucumbers/onions etc., fried and cut sausages
Method:
Beat 1 egg per 2 appams/ dosas and keep aside. Pour the batter onto the griddle - since i made an appam, it was an appamchetti. Pour half a beaten egg onto the appam and swirl. Cover with a lid and let it cook half a minute. 
Remove the appam, apply soft cheese onto the appam and sprinkle desired herbs and seasonings. Add any fillings if desired, else roll up as it is and serve along side some dipping sauce like sweet chilli sauce or eat as is along with some boiled sweet potatoes. Awesome meal/ breakfast in a jiffy that fills you up and makes for a tasty crepe like nibble too.
